Ginger Chicken and Rice Soup

1 chicken portion, on the bone, with skin removed
2 carrots, finely diced
2 stalks of celery, finely diced
2cm piece fresh ginger, grated
100g white rice
1. Place all the ingredients in a large pan and add 800ml of water.
2. Bring to the boil and simmer for 30 minutes, stirring the soup occasionally.
3. Remove the chicken from the pan and shred it using two forks to pull it apart. Return the chicken to the pan and discard the bone.
4. Stir and serve immediately.
