Braised Red Cabbage

Ingredients

Half medium red cabbage, quartered, cored and sliced
1 red onion, peeled and sliced
40grms dried cranberries
1 Bramley apple, peeled, cored and grated
1 tsp ground cinnamon
10gms demerara sugar
2 tblsp red wine vinegar
black peper

Method

Preheat the oven to 170C/325F/Gas 3.

Mix the cabbage with the rest of the ingredients and put in an ovenproof dish.

Season well with black pepper and cover with foil.

Bake in the oven for 60 to 90 minutes or until the cabbage is tender and juicy.

Mix the ingredients together 2 to 3 times during cooking.

Serving suggestions

Serve immediately; or allow to cool and store in the fridge and reheat when needed.
