Coronation Chicken Pasta recipe

500g chicken breast
2 onions, finely chopped
4 tbsp mango chutney
300g mayonnaise
300g natural yogurt
1 teaspoon chilli powder
2 tbsp mild curry powder
2 tablespoon veg oil
salt and freshly ground black pepper
good squeeze of lemon juice
8 tablespoons toasted flaked almonds (to serve)
750g pasta, cooked and cooled


Fry the chopped onion in 1 tablespoon oil until soft, then add the chilli powder. Chop the chicken breasts into bite size pieces and add to the pan and add the lemon juice

When the chicken is just cooked add the mango chutney and curry powder and stir over the heat for a minute or 2. Turn off the heat and leave to cool.

In a separate bowl pour in the mayo and 100ml natural yogurt. Add the curry and chicken mixture and stir well until it is thoroughly coated with the mixture. Add a bit more yogurt if the mixture is too hot to taste.

Mix with the cooled pasta and put into serving containers then garnish with the flaked almonds
