Sesame and Chilli Tofu with Mange Touts

Mangetout, trimmed 450g, Sesame oil 5tbsp, Sunflower oil 2 tbsp, Shallots, peeled and finely chopped 5, Red chilli pepper, deseeded and finely chopped 2, Marinated tofu pieces (eg Cauldron golden marinated tofu) 375g, Beansprouts 2, Sesame seeds 5tbsp, Light soy sauce (optional) 5tbsp
1. Bring a large pan of water to the boil and add the mangetout. Boil for 1 min, then drain and refresh under cold running water.
2.Heat the oils together in a large wok or pan and add the shallots and chilli. Stir-fry for 1-2 minutes, then add the tofu pieces and stir-fry for a further 1-2 minutes.
3.Add the mangetout, beansprouts and sesame seeds and stir-fry for 2-3 minutes until just tender. Sprinkle with light soy sauce if liked.
Serve with brown basmati rice (or alternatively the same rice as used for other dishes or potatoes)
