Baked chicken drumsticks

150g Finely grounded roasted peanuts
150g Light brown sugar
2tsps Coarse grained salt
1 tsp Cayenne
1 tsp Ground bay leaf
1 tsp Ground cloves
1 tsp Ground nutmeg
1 tsp Ground cinnamon
1.5kg (20 pieces/10 legs) Chicken thighs
Set oven to gas mark 7. Combine the peanuts, brown sugar, salt, cayenne, ground bay leaf, cloves, nutmeg and cinnamon in a bowl. Score each thigh and drumstick twice on each side 1 cm deep.
Place chicken in large bowl, add the spice rub and toss to coat evenly.
Roast in oven for about 35 minutes gas mark 7.
