Rhubarb and Ginger Fool

750g Rhubarb, trimmed and chopped to 1 cm pieces
250g Caster sugar
1 Orange, grated rind of
1 tbsp Stem ginger, very finely chopped
300ml Double cream


1. Pre-heat the oven to 190C/375H/Gas 5.
2. Put the chopped rhubarb, sugar and orange rind in an oven proof dish. Mix well and cover with tin foil. Do not add any additional liquid. Bake in the oven for 30

Serve in small foils or small plastics.
