Mchuzi (African Beef Stew)

Ingredients

750g Stewing Beef (boneless) diced
3 Medium sized potatoes, peeled and cubed
3 Medium sized carrots, peeled and sliced
2 Medium sized onions chopped
400g Greens (Greens, cabbage etc)
1 Large onion, peeled and chopped
1 Green chilli, de-seeded and chopped
1 Beef stock cube in 250mls of water (Halal / Gluten free if necessary)
850mls Chicken stock or stock cubes in same amount of water (Halal / Gluten Free if necessary)
12tsps/60mls Vegetable oil
50g Butter
1 tsp Curry powder (medium)
1 tsp Lemon Juice
350g Long grain rice
Salt to season
Salt & pepper for taste

Method

Certain quantities are given in teaspoons. 1 tsp = 5ml

Main Dish

1. Put the diced meat into a large saucepan with salt, lemon juice and enough water to cover the meat

2. Bring to boil, then simmer gently, cover for 1 hour or until meat is tender, topping up with hot water if necessary

3. Heat oil in a frying pan over medium heat and the cook onions until they are golden

4. Add onions, potatoes and carrots to the meat with the curry powder and beef stock cubes

5. Simmer, covered until the vegetables are soft. This may take up to a hour

Savoury Rice

1. Heat oven to 180c/160c fan assisted oven/350f/gas mark 4

2. Wash the rice thoroughly in a large sieve and drain well

3. Heat half the butter with half the oil in a large casserole or ovenproof saucepan. Add the raw rice and cook over medium heat until it is light brown, stirring constantly

4. In a saucepan, heat remaining oil and butter over med heat and cook chopped onions and chili until tender

5. Add the onion mixture to the rice and continue to cook, stirring well. Add the stock (or crumbled cubes in water), salt and pepper, stirring well to prevent the rice sticking to bottom of pan

6. Cover and transfer pan to oven for 30 to 40 minutes. The rice will have absorbed all the liquid an should be lightly browned on the surface

Accompaniment 1

1. Wash greens or cabbage and cut up

2. Add to boiling water and cook until tender

Additional information/useful tips:
Add some canned, drained chick peas or beans for extra protein
Make sure you give the beef plenty of time to cook up to 2 hours overall
