Roast Vegetable and Hummus Wraps

250 gms Aubergine
2x200 gms Red peppers
1x200 gms Courgette
1 Red onion
3 Garlic cloves - peeled
80 mls Olive oil
200 gms of Black eyed beans - drained and rinsed
1 tsp Rosemary or oregano - dried or fresh
Large pinch of Black pepper
5 Tortilla wraps - gluten free as necessary
200 gms Hummus
2 Avocado – mashed. Optional for non hummus eaters


1. Heat the oven to 200ºC/Fan Asst’d 190ºC/400ºF/Gas mark 6. Guide only. Refer to your appliance manual

2. Chop the aubergine, red pepper, courgettes and red onion into bite-size chunks. Crush the garlic and add it to the vegetables along with the herbs and pepper

3. Toss the vegetables in the olive oil. Spread them on a baking tray and roast in the hot oven until they are soft

4..Remove them from the oven, mix in the beans and allow them to cool. Spread each wrap with about 60 gms of hummus or avocado

5. Divide the roasted vegetables between the wraps, roll, cut in half lengthways and put in a dish

Serving suggestions

Sliced meat and chopped nuts can be add to the wrap for added protein.
