Pork Steak with Herby Butter Beans

Ingredients

5x130 to150 gms Pork steak or lean boneless chop
2 Smoked streaky bacon rashers, roughly chopped
15 mls or 1 tbsp Olive oil
1 large Red pepper – de-seeded and roughly chopped
1 large Red onion - peeled and finely chopped
2 sprigs Rosemary leaves – picked and finely chopped
2 Bay leaves
1 and halfx400 gm tin Butter beans - drained
400 gms Swiss chard - stalks trimmed and finely sliced, leaves roughly chopped
400 gms Courgettes - sliced into thick rounds
25 gms Butter
15 mls or 1 tbsp Olive oil
Freshly ground black pepper to taste

Method

1. Heat a pan on medium heat. Add the olive oil and fry the bacon for a couple of minutes. Stir in the chopped onion and pepper and turn the heat down. Cook for about 10 more minutes or until the vegetables have softened.

2. Add the rosemary, bay leaves and the butter beans with 350 mls of water. Turn the heat to low, stir and leave to cook for about 10 minutes. Keep an eye on the beans and add a splash more water if they look dry.

3. Add the Swiss chard stalks to the pan and cook for 5 minutes. Add the leaves in the last 2 minutes of cooking, Taste and season as necessary with salt and pepper. Cook for a few more minutes - if you want to achieve a thicker consistency.

4. In the meantime, lightly oil the pork steaks and cook in a frying pan for approx 5 to 7 minutes on each side (depending on the thickness).
5. If you are short of hob space, simply sear on each side for around 1 minute at a high heat and put all seared chops into a large tray and finish in a 180ºc/160ºc Fan/350ºf/Gas mark 4.oven for a further 15 to 20 minutes or until cooked through. Temperatures are a Guide only. Refer to your appliance manual.

Courgettes:
Stir and Melt the butter and the oil in a pan over a medium heat and add the courgettes put the lid on. Check regularly over the next 5 to 10 minutes, stirring so they don’t catch, or until cooked.

Serving suggestions

Rice:
Cook the rice using your own preferred method or boil or steam the rice according to packet instructions, then drain before serving
