Baked Chicken Drumsticks

Ingredients

  • 150 g Finely grounded roasted peanuts
  • 150 g Light brown sugar
  • 2 tsp Coarse grained salt
  • 1 tsp Cayenne
  • 1 tsp Ground bay leaf
  • 1 tsp Ground cloves
  • 1 tsp Ground nutmeg
  • 1 tsp Ground cinnamon
  • 1.5 kg 20 pieces/10 legs Chicken thighs

Instructions

  • Set oven to gas mark 7. Combine the peanuts, brown sugar, salt, cayenne, ground bay leaf, cloves, nutmeg and cinnamon in a bowl. Score each thigh and drumstick twice on each side 1 cm deep.
  • Place chicken in large bowl, add the spice rub and toss to coat evenly.
  • Roast in oven for about 35 minutes gas mark 7.
