Braised Red Cabbage

Ingredients

  • Half medium red cabbage quartered, cored and sliced
  • 1 red onion peeled and sliced
  • 40 g dried cranberries
  • 1 Bramley apple peeled, cored and grated
  • 1 tsp ground cinnamon
  • 10 g demerara sugar
  • 2 tbs red wine vinegar
  • black peper

Instructions

  • Preheat the oven to 170C/325F/Gas 3.
  • Mix the cabbage with the rest of the ingredients and put in an ovenproof dish.
  • Season well with black pepper and cover with foil.
  • Bake in the oven for 60 to 90 minutes or until the cabbage is tender and juicy.
  • Mix the ingredients together 2 to 3 times during cooking.

Notes

Serve immediately; or allow to cool and store in the fridge and reheat when needed.
