Ingredients

chicken portion
on the bone, with skin removed
2
carrots
finely diced
2
stalks of celery
finely diced
2
cm
piece fresh ginger
grated
100
g
white rice
Instructions
Place all the ingredients in a large pan and add 800ml of water.
Bring to the boil and simmer for 30 minutes, stirring the soup occasionally.
Remove the chicken from the pan and shred it using two forks to pull it apart. Return the chicken to the pan and discard the bone.
Stir and serve immediately.
