Ginger Chicken and Rice Soup

Ingredients

  • 1 chicken portion on the bone, with skin removed
  • 2 carrots finely diced
  • 2 stalks of celery finely diced
  • 2 cm piece fresh ginger grated
  • 100 g white rice

Instructions

  • Place all the ingredients in a large pan and add 800ml of water.
  • Bring to the boil and simmer for 30 minutes, stirring the soup occasionally.
  • Remove the chicken from the pan and shred it using two forks to pull it apart. Return the chicken to the pan and discard the bone.
  • Stir and serve immediately.
