Tuna and black olive pasta salad

Ingredients

  • Red wine vinegar
  • Extra-virgin olive oil
  • 1 kg pasta cooked
  • 500 g diced tomatoes
  • 1/2 cucumber
  • Spring onions 10 bulbs
  • 300 g tinned pitted black olives drained
  • 2 tbsp of oregano
  • 100 g capers drained
  • 1 kg tuna
  • Basil

Instructions

  • Combine the vinegar and olive oil. Whisk gently to emulsify.
  • Place the tomatoes, cucumber, spring onions, olives, basil, oregano, capers and tuna in a medium sized bowl.
  • Pour over pasta and dress with dressing.
  • Season to taste with salt and pepper.

Notes

For feta cheese version, substitute tuna with the cheese. Using 1 pack of 200g feta per two people.
