Rhubarb and Ginger Fool

Ingredients

  • 750 g Rhubarb trimmed and chopped to 1 cm pieces
  • 250 g Caster sugar
  • 1 Orange grated rind of
  • 1 tbsp Stem ginger very finely chopped
  • 300 ml Double cream

Instructions

  • Pre-heat the oven to 190C/375H/Gas 5.
  • Put the chopped rhubarb, sugar and orange rind in an oven proof dish. Mix well and cover with tin foil. Do not add any additional liquid. Bake in the oven for 30

Notes

Serve in small foils or small plastics.
