Summer Fruit Fool

Ingredients

  • 500 ml Ready made custard
  • 150 ml Double cream
  • 500 g Summer fruit
  • 25 g Flaked almonds
  • 1/4 tbsp cinnamon
  • 3 tsp Icing sugar – to taste
  • 10 Shortbread biscuits

Instructions

  • 1.If using frozen berries, thaw and drain. If using fresh fruit, wash and chop finely and add cinnamon and icing sugar.
  • 2.Taste to check if it needs more sugar.
  • 3.Whip double cream until thick and mix with the custard and fruit.
  • 4.Serve with a biscuits on the side.
