Recipe 7: Homemade Chapati

METHOD

Step 1
Peel and finely grate the carrots. Remove the outer layers of onion then grate it. Squeeze the grated carrot to remove the the juice and save the juice.

Step 2
Put the flour, grated carrots, grated onion, salt and oil in a mixing bowl. Mix to form a soft dough adding the carrot water if necessary.

Step 3
Kneed the dough for 10 minutes until smooth and elastic. Rub the dough with a little oil and wrap in cling film. Leave for about 1 hour

Step 4
Divide the dough into 4 balls. Sprinkle flour on the work surface and roll each ball into a 17cm round. Heat a frying pan on a medium-high heat and dry cook each chapati until it starts to brown then turn over.

Step 5
When cooked, lightly brush with oil, wrap in a tea towel to keep warm.

INGREDIENTS

  • 150g Plain Wholemeal flour
  • 100g carrots, peeled and finely grated
  • 50g onion, grated
  • Salt (pinch)
  • Vegetable Oil (approx. 2 tbsp)
  • Vegetable oil for brushing

UTENSILS

  • Mixing Bowl
  • Grater
  • Potato peeler
  • Knife
  • Measuring Scale
  • Rolling pin (or wine bottle!)
  • Board/floured surface/grease-proof paper to roll dough on
  • Cling film to wrap dough
  • Fish slice (to turn chapattis)
  • Frying pan

CHEF’S TIP
This recipe uses wholemeal flour which absorbs more water than white flour. Therefore, if you are using more white flour, reduce the amount of water.
