Baked Rice Pudding & Fruit Compote

Ingredients

Rice Pudding

  • 100 g pudding rice
  • 600 ml whole milk
  • 30 g caster sugar
  • Pinch of nutmeg

Fruit Compote

  • 200 g mixed berries of your choice
  • 20 g golden caster sugar
  • Juice of ½ small lemon
  • Pinch of ground cinnamon optional
  • Fresh mint to garnish optional

Instructions

  • Pre-heat the oven to 160°C/325°F/Gas Mark 3.
  • Place all the ingredients into an ovenproof dish, stir and sprinkle with the nutmeg and place in the oven.
  • Bake for about an hour. Check after 30 minutes that the milk hasn’t all absorbed into the rice. If it has just add a little more milk.
  • Once a golden brown skin has formed its ready to serve.

The Fruit Compote

  • Place the berries with the sugar, lemon juice and cinnamon into a bowl. Blend using a hand held blender, alternatively use a food processor and blend until smooth.
  • Garnish with fresh mint.
