Chocolate Bread and Butter Pudding

10g plain chocolate
120ml single cream
150ml full-fat milk
small pinch of salt
2 eggs (medium)
40g granulated/caster sugar
1/4 tsp vanilla essence (optional)
5 slices of plain white bread
33g unsalted butter
1. Break the chocolate into small pieces and put into a saucepan with the cream, milk and the pinch of salt. Stir over medium-low heat until the chocolate has completely melted. Allow the mixture to cool a little, stirring occasionally.
2. Whisk the eggs with the sugar and the vanilla essence, if using. Gradually whisk in the chocolate mixture and put this aside. Butter a deep (approx 10cm deep) baking tin.
3. Butter the bread (and cut the crusts off - optional ) Cut each slice in half. Put a layer of bread into the bottom of the baking tin, trimming the buttered bread to fit snugly. Pour over some of the chocolate mixture
For extra calories this can be served with cream. If wished, pour over a little single cream when you serve the pudding.
