Herby Roast Chicken with Vegetables

Ingredients

10 bone in chicken pieces e..g. leg and thigh (or 1 kg)

6 tsps (A small handful) of mixed fresh herbs, such as thyme, sage, rosemary, oregano, parsley, picked from the stems and chopped

20 ml Olive oil

Half tsp Salt

Half tsp Pepper

Half tsp Paprika

1kg Potatoes

400g Green beans

400g Cauliflower, stalks discarded and florets broken up

250 mls Gravy (Use gravy granules and mix according to package directions, or make gravy using the pan juices from the chicken and 250 mls Chicken stock)

Method

1. Pre heat the oven to 220c/ 200 fan asst’d /425f /gas mark 7

2. Combine chicken pieces with herbs, olive oil, salt and pepper

3. Arrange skin-side up in a single layer on a baking tray and roast for 25 minutes or until the skin is crispy.

Serving suggestions

Suggest serving with potatoes (mash or roast), green beans and Cauliflour.
